Crunchy Chinese Cabbage Salad

Ingredients

2/3 Cup Vegetable Oil

1 Tbsp Toasted sesame oil

1/2 Cup Sugar

1/2 Cup Vinegar (rice or white)

2 pkgs Ramen noodles (chicken flavor), Broken up, spice pack set side

8 Green onions, sliced extremely thin

1/2 Cup Cilantro, chopped

5-7 oz Almonds - sliced, toasted

2 pkgs Angel hair cabbage

1/2 - 1 Cup fruit of choice (mandarin oranges, pear, mango [ripe, green, or a combination of both])

Directions

Dressing
Mix sugar, vinegar, and spice packs. Stir to dissolve. Add vegetable and sesame oils. Shake well and allow to sit.

Salad
Mix remaining ingredients and keep refrigerated until ready to serve (keeping almonds and ramen separate if not being served for a while to maintain maximum crunchiness).

Just before serving, mix salad and dressing and top with fruit for garnish .
